While in Kanab this past week, we were able to visit Escobar's Mexican Restaraunt! Many of you sent us messages, telling us we needed to visit! I can't remember everything we tried, but these mushrooms and shrimp tacos were pretty dang delicious. The husband got a number one! Chile Relleno, Enchilada and Taco. We also spied a Chimichunga...it looked pretty awesome. We ordered the kids tacos. As you can tell below, they loved them. We spent this past weekend hanging out in Kanab for our second Utah Staycation! First things first! We woke up bright and early to head out for Kanab's Balloons & Tunes Festival! Word had it there was going to be over 30 balloons floating in the air. Years ago, my husband and I were lucky to meet a balloon pilot while I worked as a waitress. Living in Hurricane, UT it may seem a little odd that for spring break this year we chose to do part of our vacation in Kanab, a small Southern Utah town located just 1-hour east of Hurricane. Today, we have one of the coolest/talented/craziest guy I know. Terral Fox is a super outdoor enthusiast/farmer/artist/dad/shoemaker. Having grown up in the red rocks of Cedar City, he knows all the cool places. I've watched his Instagram/Facebook account for years and he's been so many cool places! He owns a minimalist sandal company called Unshoes. He's taken his Unshoe Sandals (and kids) to the top of Angel's Landing (picture above) to the bottom of the Grand Canyon to Havasupai.
