Syracuse RC Willey Food Truck Event!

(It maybe be a mouthful to pronounce, but sheeesh, have you ever tried looking on Facebook for Food Truck Groups?  It's CRAZY!) This group is located in Syracuse at the RC Willey Parking Lot. (Address below and be sure to see our tips)

In no particular order, we give you a few of the food trucks we've tried.

Courses Cooks Food Truck & Courses Catering

This family owned business is one of the local favorites. The line was already quite long and they'd only been open for a few minutes.

Their Cheese taco shell "Changed my life." Said Wendy H. from Syracuse.  While I was sorely tempted to try the cheese taco shell, because really, fried CHEESE? I knew my stomach wouldn't tolerate it, as in lactose intolerant. So I opted for some pork enchiladas with the cheese on the side. 

This guy seemed to be running the show...or the cooks. He didn't miss a beat on any order. 

I love me some good traditional Mexican food. The pork was tender the enchilada sauce savory and the rice just the right amount of spices. The kids were literally stuffing their mouths full with rice and beans. We loved it. 


He was quite please with his food and so was I.

Me, oh, my. I had one Jamaican Jerk Wing. You guys, seriously, sooooo good. Just the right crispiness, tenderness, sauciness all in one. I usually don't love wings, but I was pretty much blown away with the sauce. 

I consider myself kind of a fry snob. These however, were delicious and extra good. (I ate the fries without all the cheesy goodness, but my husband LOVED these loaded fries.)

Locally Twisted

Let's talk about these guys for a minute. This Uncle-Niece duo were quite the show stealers. 

I'm a sucker for colors and all things happy, so naturally, I had to go and look.

Jeffrey is the owner and he's been balloon twisting since he was 14 and 16 years later he supports his family with balloon creations! He brought on his niece, so she could earn some money for college. 

Check out his Facebook page, he just did the Disney UP house, like 10 feet tall amazing.  

Aiko requested (in her mind, I just let them know) that she wanted a monkey. Once she had some food in her belly, she was so much more excited to play with monkey! Aiko's cute shirt is from a local Utah Shop Sophia M Boutique. 

Heidi Cakes

I hope that the cupcake craze never ends. If there is one thing I love, it's cake, especially cupcakes. When the husband and I go out for desserts he goes for ice cream and I try to find the most delicious cupcake out there. I may have found the place people. 

Now, I believe that the most important thing about cupcakes is the cake. If your cake ain't heavy, moist and delicious let's not even talk. 

We were so full from all our other food, we didn't even try a cupcake until the next day. It's probably a good thing I waited, because I would have eaten two or three in a sitting. (I did that the next day)

Heidi's were all of the above. PLUS, there was a hidden surprise inside that I wasn't expected, which always makes it better!

I put the kids down for their morning nap...and decided to eat a Chocolate Chip. Basically, I inhaled it. 

Yes, I always take the top off and put it in the middle, because I like to have frosting on all my cupcake. After decided that my cupcake went all too fast, I decided that I probably not keep these in the house. Instead, I thought that the Secret Service Ninja needed to do some ninja-ing. He secretly left some cupcakes around the neighborhood. 

Don't worry, I kept a few for myself. Plus, I totally ate Aiko's Carrot Cake Cupcake that I told her she could have. While I was eating it, I thought "Stealing candy from a baby." Luckily, she didn't remember it.

Helpful Tips

The outer part of the parking lot is the only place with shade, so get there early to claim a spot! We also saw lots of people who brought their own chairs and blankets. 

The parking lot is HOOOOTTTT! I literally could feel my calves tanning/burning from the reflection.
